Ingredients:
For the Steak:
- 1kg flank steak
- 2 tbsp Lane’s BBQ Fiesta Rub – Available from Heat & Grill
- 3 tbsp olive oil
- 2 tbsp lime juice
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
For the Grilled Corn:
- 2 ears of corn, husked
- 1 tbsp butter, melted
- 1 tsp Lane’s BBQ Fiesta Rub
- ½ tsp smoked paprika
For the Tacos:
- 8-10 small corn or flour tortillas
- 1 cup red cabbage, finely shredded
- ½ cup fresh coriander, chopped
- ½ red onion, thinly sliced
- 1 jalapeño, sliced (optional)
- ½ cup crumbled feta cheese
- 1 lime, cut into wedges
For the Sauce:
- ½ cup sour cream
- 1 tbsp hot sauce (or to taste)
- 1 tbsp lime juice
- 1 tsp Lane’s BBQ Fiesta Rub – Available from Heat & Grill
Method:
1️: Marinate the Steak:
- In a bowl, mix olive oil, lime juice, garlic, Worcestershire sauce, and Lane’s BBQ Fiesta Rub.
- Coat the flank steak evenly, cover, and marinate for at least 1 hour (overnight is best).
2️: Grill the Corn:
- Preheat the grill to medium-high heat (200°C).
- Brush the corn with melted butter and season with Lane’s BBQ Fiesta Rub and smoked paprika.
- Grill for 10-12 minutes, turning occasionally until lightly charred.
- Once cooled slightly, slice the kernels off the cob for taco topping.
3️: Grill the Steak:
- Increase grill heat to high (220-250°C).
- Grill the steak for 4-5 minutes per side for medium-rare, or longer for desired doneness.
- Rest for 5-10 minutes, then slice against the grain for tenderness.
4️: Make the Sauce:
- Mix sour cream, hot sauce, lime juice, and Lane’s BBQ Fiesta Rub until smooth.
5️: Assemble the Tacos:
- Lightly char the tortillas on the grill for 30 seconds per side.
- Load them up with sliced steak, red cabbage, grilled corn, coriander, red onion, jalapeño, and crumbled fetta cheese.
- Drizzle with the creamy sauce and finish with a squeeze of fresh lime.
