Lachy Strachan’s recipe for BBQ garlic, lime & chilli prawn skewers
With Christmas just around the corner here is a way to turn up your prawn game! Sick of the bland tasteless prawns on Christmas day? Well, this recipe is just what you need. They are so good you will be making them over & over!
Instructions
- Preheat BBQ with the lid closed on high for at least 10 minutes
- Melt the butter in a pan or saucepan over low heat. Once the butter has melted remove from the heat & mix in the garlic, lime juice & zest, chopped parsley & chilli.
- Thread the prawns onto your skewers (I prefer stainless steel
skewers which Weber has a great range of sold at Heat & Grill)
Coat the prawns with olive oil, salt & pepper. - Turn the heat down to medium & place the skewers onto the cooking grill & cook for 3 minutes per side with the lid closed. For the last minute of cooking on each side baste with the garlic, lime & chilli mixture.
- Remove from the BBQ & serve with some charred lime & aioli for dipping.
- Enjoy!

- 2kg Uncooked large prawns
- 100g Unsalted butter
- 2 Garlic cloves finely chopped
- 2 Limes
- 1 Long red chilli, seeded & chopped
- 2 Tablespoons parsley chopped
- 150g Aioli
