Lachie Strachan’s Sausage & Cheese Stuffed Bread with Chimichurri Dressing
Originally an Argentinian recipe this is such a simple yet delicious meal to grill on the BBQ. With only a few
ingredients and minimal cooking time this is sure to be a crowd pleaser for your next BBQ! Everyone will love
the mild Italian flavour of the sausage, but I have mixed it up with some tasty chimichurri dressing.
INGREDIENTS SERVES 4:
X8 Italian sausages
X4 Bread roll
X8 Slices provolone cheese
Chimichurri Dressing:
½ Cup fresh parsley
½ Cup coriander
3-4 Cloves garlic
1 shallot
1 Teaspoon Sea salt
1 Teaspoon red chilli flakes
1 Teaspoon Italian blend seasoning
½ Cup olive oil
1/3 Cup red wine vinegar
INSTRUCTIONS
1. Preheat BBQ for direct medium heat cooking on the grill with the lid closed
2. Blend all chimichurri ingredients in a food processor & pulse until smooth.
3. Cut rolls in half & remove most of insides but not all the way through.
This then creates a well to fill with the cheese & sausage.
4. Line the cheese inside the rolls leaving at least a 5mm border around the edge of the crust.
Cut the lining of the sausages lengthways & remove the sausage fillings from the casing.
5. Spread the sausage meat out over the cheese on each roll pressing flat with hands enough so
that all the cheese is covered and is pressed to the edge of the crust.
6. Grill over medium heat sausage side down with the lid closed for around 8-10 minutes or
until the sausage meat is nice and golden with grill lines. Be careful flipping use a spatula to help flip. Continue to cook with the bread side down for another 3-4 minutes.
7. Serve with fresh chimichurri dressing & be prepared for a flavour explosion.
