The Ultimate Brekkie Burger for Dad!

Fathers Day is just around the corner and what better way to celebrate than to cook up Dad an amazing breakfast on the BBQ.

This one is simple and easy to get the kids involved obviously with supervision on the BBQ of course.

Ingredients:

  • 1 Large brioche roll per person – My favourites are the ‘Challa Buns’ from Woodfrog bakeries!
  • 1 egg per person
  • 1 avocado
  • Punnet cherry tomatoes
  • 1 slice of cheese per person
  • Rocket
  • 2 slices of steaky bacon per person
  • Olive Oil
  • Salt & Pepper
  • Aioli

Instructions:

  1.  Preheat BBQ setup with grill & either a hotplate or Weber Frying Pan with the lid closed.
  2. Split the brioche rolls & mash the avocado in a bowl
  3. Coat the cherry tomatoes with olive oil, salt & pepper
  4.  Once BBQ is preheated reduce to medium heat & place the steaky bacon on the grill side along with the cherry tomatoes, cooking the bacon for around 3 minutes per side & giving the tomatoes a roll around on the grill every couple of minutes, but be gentle so they don’t burst. Once Bacon is cooked place onto a plate with paper towel
  5. Crack the eggs either onto your hotplate or into your Weber frying Pan & season with salt & pepper, make sure you close the lid, by closing the lid you are allowing the eggs to perfectly cook on the top without flipping. Cook the eggs to your liking. Place the brioche rolls cut side down on the cooking grill for roughly 1-2 minutes. Be careful as depending on the butter content in the brioche rolls they can cook quite quickly so keep checking on them.
  6. Assemble your rolls with some mashed avocado on the bottom & build up from there with a spread of aioli on the tops of the buns. Slice the cherry tomatoes they can be a bit mushy but don’t worry the flavour from cooking them on the grill is unreal!
