Lachie Strachan’s recipe for smoked parmesan cheese crusted salmon

Elevate your salmon experience with our Smoked Parmesan Cheese Crusted Salmon recipe. This dish combines the succulence of salmon with a rich, smoky essence and a savory Parmesan crust. Simple yet sophisticated, this culinary masterpiece promises a visual delight and an explosion of exquisite flavors. Impress your palate and guests with this extraordinary smoked salmon creation!

Ingredients

  1. 1kg Side of salmon, deboned
  2. 1⁄4 Cup spicy mayonnaise (preferably whole egg)
  3. 1 Packet of fresh dill roughly chopped
  4. 100g Fine grated parmesan cheese
  5. 2 Tbsp BBQ Seasoning ( I like to use Lanes BBQ Signature Rub sold at Heat & Grill stores or online)

Instructions

  1. Preheat BBQ for indirect cooking at around 100c. For best results use a smoker or smoker box in your BBQ. Create a foil boat slightly larger than your side of salmon and place salmon into the boat. Coat the salmon with the spicy mayonnaise then mix the dill, parmesan & BBQ rub into a bowl and evely cover over the top of the spicy mayonnaise. Smoke or bake for around 1 hour or till the salmon reaches minutes or till it has reached 63c. Make sure to use a meat thermometer for accuracy.
  2. Remove salmon from BBQ and rest for 5-10 minutes covered lightly with foil.
  3.  Pair this Smoked Parmesan Cheese Crusted Salmon with a medley of complementary sides to create a well-rounded and satisfying meal. Consider serving it alongside:

Garlic Roasted Asparagus:
Tender asparagus spears roasted to perfection with a hint of garlic for added depth.

Mixed Green Salad:
A refreshing salad featuring a variety of crisp greens, cherry tomatoes, and a balsamic vinaigrette for a touch of acidity.
