Lachie Strachan’s recipe for pork and pineapple chipotle skewers

Tender pork mixed with sweet pineapple and grilled red onion and capsicum is a match made in heaven especially after being basted with an amazing pineapple chipotle BBQ sauce. These skewers are delightful in summer and are waiting to be grilled on your BBQ asap!

Ingredients

Serves 4:

  • 450 Grams pork scotch fillet cut into 2cm cubes
  • 1⁄4 Fresh pineapple cut into 1cm slices
  • 1 Red capsicum cut into 2cm squares
  • 1 Green capsicum cut into 2 cm squares
  • 1⁄2 red onion cut into thick wedges
  • Olive oil
  • Salt & Pepper
  • Fresh Parsley for garnish

Basting Sauce:

  • Lanes BBQ Pineapple Chipotle Sauce available from Heat & Grill Stores & Online

Instructions

  1. If you choose to use wooden skewers please make sure to soak them in water for 30 minutes prior.
  2. Preheat BBQ for direct medium – high heat around 220-260c
  3. Thread the ingredients onto each skewer, alternating between the pork, pineapple, capsicums & red onion. Coat evenly with some olive oil, salt & pepper.
  4. Grill the skewers with the lid closed for around 10 minutes giving them a 1⁄4 turn every 2 1⁄2 minutes. In the last 2 1⁄2 minutes baste some of the Lanes BBQ Pineapple Chipotle sauce & close the lid allowing the sauce to drip and coat the skewers.
  5. Remove the skewers from the BBQ & let rest for a few minutes prior to serving. Garnish with fresh parsley.
