Lachie Strachan’s recipe for Grilled Veggies in Stainless Steel Basket

Elevate your grilling game with this vibrant medley of grilled capsicum, red onion, and snow peas, perfectly roasted in a Weber stainless steel grilling basket. The sweet, smoky Flavors of the capsicum, the caramelized richness of red onion, and the crisp freshness of snow peas come together for a delightful side dish that complements any barbecue spread. Simply toss the veggies with olive oil, salt, and pepper, then grill until tender and slightly charred. Serve warm for a colourful and delicious addition to your meal that’s as easy as it is satisfying!

INGREDIENTS

You will need x1 Weber stainless steel grilling basket available in various sizes.

  • Red capsicum
  • Green capsicum
  • Red onion
  • Snow peas
  • Fresh thick asparagus
  • Olive oil
  • Lanes BBQ Go Full Texan
  • Salt & Pepper

INSTRUCTIONS

  1. Preheat BBQ on high heat with the lid closed for 10-15 minutes with your Weber SS grilling pan inside.
  2. Cut the capsicums and red onion into thin pieces & place in a large mixing bowl. Remove stem ends of the snow peas & set aside in bowl separate to the capsicums & red onion.
  3. Coat the veggies with olive oil then salt & pepper.’
  4. Turn the BBQ down to medium – high heat & throw the apsicums & onion straight into the SS grilling pan & close the lid. Cook for around 7-10 minutes but continue to toss them every 1 minute closing the lid after finished tossing. You want to get some nice colour and charring on them.
  5. In the last 2 minutes add the snow peas in as they don’t take long to cook at all & you want them still crunchy.
  6. Remove from the grill pan or take the grill pan out with your heat proof gloves. Serve as a side to any meal & enjoy warm with the amazing grilled flavours you just can’t get anywhere else.
