BBQ lobster tail with a zesty herbed butter

Lobster tail can be quite expensive so it’s considered fancy, however it is very easy to prepare and cook at home on your BBQ! 

Pair it with a fresh salad and you have yourself a winner!

Serves 4

INGREDIENTS

  • 1/4 cup of melted butter
  • 1 tablespoon of lemon juice
  • ½ a tablespoon of lemon zest
  • 2 tablespoons of freshly chopped chives & extra for garnish
  • 2 tablespoons of freshly chopped parsley & extra for garnish
  • 1 clove of minced garlic 
  • 1/4 tablespoon kosher salt, plus more for seasoning
  • 4 220g lobster tails
  • Olive oil
  • Freshly ground black pepper
  • Red chilli flakes
  • Lemon wedges to serve 

DIRECTIONS

  1. Pre-heat your bbq for direct medium heat. 
  2. In a small bowl, whisk together melted butter, lemon juice, zest, chives, parsley, garlic, and salt.
  3. Using kitchen scizzors, cut the top of the lobster shell from the meaty portion of tail. Using a knife, cut halfway through the meat down the center, without cutting all the way through. 
  4. Brush it all over with oil and season with salt and pepper. Grill the flesh side down until lightly charred, for about 6 minutes. Flip the lobster and dollop a spoonful of butter mixture on the flesh side. Grill it until it’s just cooked through, about another 5 minutes more.
  5. Remove lobster from grill and sprinkle with red pepper flakes. Serve with lemon wedges.

I also cooked some salmon fillets next to the tails seasoned with olive oil, salt, pepper, fresh lime, dill & chilli flakes!
