This grilled Chicken Parma is a fun twist on what is an Aussie pub staple! Once you try
this you will be hooked on that grilled flavour with the marinated balsamic chicken,
melty mozzarella, grilled ham & rich basil tomato sauce.

INGREDIENTS
Serves 4:
4 Chicken breast fillets skin off
1/3 Cup olive oil
3 Tablespoons balsamic vinegar
2 Garlic cloves minced
1 Tablespoon dried basil
3 Large tomatoes
2 Thick slices ham off the bone
Salt & pepper
1 Large fresh Mozzarella
2 Cups tomato & basil pasta sauce
½ Cup freshly grated

INSTRUCTIONS
1. Whisk together the olive oil, balsamic vinegar, garlic, dried
basil along with a large pinch of salt & pepper. Pour the
mixture over the chicken breasts and leave to marinate in
the fridge for at least 30 minutes, overnight for best results.
Remove from the fridge 30 minutes prior to cooking.
2. Preheat BBQ with the lid closed on high for at least 10
minutes
3. Once preheated remove chicken breasts from the marinade
letting the excess drip off, Place the breasts directly onto the
cooking grill & grill for 5-6 minutes with the lid closed. Flip &
grill for 3 Minutes more. At this stage place the slices of ham
on the cooking grill & grill for around 1-2 minutes per side
just to get some nice grill lines.
4. Remove the ham from the grill & slice in half creating 4
slices, Lay the grilled ham over each chicken breast & top
with slices of tomato & slices of fresh mozzarella. Close the
lid for another 1-2 minutes until the cheese just begins to
melt. Always test the internal temperature of the chicken
before removing should be 72c.
5. Once you have removed the breasts to rest for around
3-4 minutes, warm up the pasta sauce & place a
blanket of the warmed sauce on a large plate, Place
