Grilled T-Bone Steak
Grill up a perfect T-bone steak with this simple recipe! A quick sear, fresh herbs, and a touch of garlic bring out incredible flavour. Finish with compound butter and a side of veggies or potatoes for a steakhouse-quality BBQ right at home!
Ingredients:
- 2 large T-bone steaks, about 4 cm thick
- 30 ml olive oil or vegetable oil
- Coarse salt and freshly ground black pepper, to taste
- 2–3 sprigs of fresh rosemary or thyme
- 4 garlic cloves, smashed
Optional Ingredients for Serving:
- Compound butter (e.g., garlic-herb butter)
- Fresh herbs for garnish (like rosemary or parsley)
- Lemon wedges (for an extra zing)
Instructions:
- Prepare the Steaks
- About 30 minutes before grilling, take the steaks out of the refrigerator. Letting them come to room temperature helps them cook more evenly.
- Pat the steaks dry with paper towels, then rub both sides with olive oil.
- Season generously with salt and black pepper on both sides. Optionally, add a bit of garlic powder or onion powder for extra flavour.
- Preheat the Grill
- Preheat your grill to high heat (230°C to 260°C) for direct grilling.
- Make sure the grates are clean.
- Sear the Steaks
- Place the steaks on the grill over direct heat. Grill the first side for 4-5 minutes until a golden-brown crust forms, then rotate 45 degrees for nice grill marks and cook for another 2-3 minutes.
- Flip the steaks over and repeat on the other side.
- Check the Temperature
- Use a meat thermometer to check the internal temperature. Aim for:
- 52°C for rare
- 57°C for medium-rare
- 63°C for medium
- If the steak needs more time, move it to a cooler part of the grill or lower the heat to let it finish cooking without burning the exterior.
- Rest the Steaks
- Transfer the steaks to a cutting board and place a small piece of compound butter on top (optional).
- Cover loosely with foil and let them rest for 5-10 minutes. This helps the juices redistribute, keeping the steak juicy.
- Serve
- Slice carefully along the bone and serve with a sprinkle of fresh herbs and a lemon wedge for brightness.

- Avoid flipping the steaks too often; aim for a single flip to achieve the best crust.
- Letting the steaks rest after cooking is key to maintaining juiciness.
- Serve immediately, ideally with grilled vegetables or a classic potato side.
