Grilled Mangoes with Coconut Sugar, Vanilla Bean Ice Cream, Crushed Pistachios & Honey
This tropical dessert is perfect for summer BBQs and adds a delightful twist with smoky caramelized mangoes paired with cool, creamy ice cream.
Ingredients:
- 2 ripe mangoes, peeled and sliced into thick cheeks
- 2 tbsp coconut sugar
- 1 cup vanilla bean ice cream
- ¼ cup crushed pistachios
- 2 tbsp honey (warm slightly for easier drizzling)
Method:
- Preheat the BBQ: Heat grill to medium-high. Ensure the grates are clean and lightly oiled to prevent sticking.
- Prepare the Mangoes:
- Cut the mangoes in half & then use your knife and cut a cross pattern into the flesh being careful not to cut through the skin.
- Sprinkle generously with the coconut sugar on the flesh sides.
- Grill the Mangoes:
- Place mango cheeks cut-side down directly on the grill.
- Grill for about 2-3 minutes on each side, or until you see caramelized grill marks. Be careful not to overcook as the mangoes can become too soft.
- Assemble the Dessert:
- Arrange the grilled mango cheeks on serving plates.
- Add a scoop of vanilla bean ice cream on the side or directly on top of the mangoes.
- Sprinkle crushed pistachios over the top and drizzle with warm honey.
Serving Suggestion:
Garnish with a few mint leaves for a fresh pop of colour and flavour.
