Dining with Den – Chicken Delight
Chicken Delight – San Choy Bau
Ingredients
1 iceberg lettuce(wash and carefully remove your lettuce cups) Soak in ice water for a few minutes then spin dry or use a paper towel.
1 cup cheong sausage, diced
4 spring onions finely chopped
½ brown onion, diced
4 fresh shiitake mushrooms, diced
6 water chestnuts, diced (frozen variety if possible)
10 lychees, chopped
10 sprigs coriander leaves, picked and washed
200g chicken mince
15g corn flour
50ml water
1 whole egg
For the dressing
60ml light soy sauce
40ml Shaoxing cooking wine
15ml oyster sauce
5ml sesame oil
Method
Mix dressing ingredients in a bowl together.
In a bowl, mix water, cornflour, salt and egg together then add chicken mince and mix well. In a hot wok fry chicken mixture until caramelized and fluffy. Add the sausage and stir until crispy. Add vegetables and continue cooking until onions are cooked through and aromatic. Lower heat and season with dressing, then let it reduce a little. Add the lychees and coriander leaves. Divide evenly into lettuce cups and serve immediately.
