Embracing the warmer mornings, I’ve chosen to highlight the Weber Q Large Frying Pan with Detachable Handle once again this week. These versatile accessories can truly revolutionize your cooking experience and expand the range of dishes you can prepare on your BBQ. Find these fantastic pans now at Heat & Grill – Richmond & Highpoint or through our online store!

I’m a big advocate for quick and easy breakfasts using these pans, and this recipe is sure to leave a lasting impression!

**INGREDIENTS**

– 500 grams cherry tomatoes

– 4 tablespoons olive oil, plus extra

– Sea salt

– Freshly ground black pepper

– 800 grams tin crushed tomatoes

– 1 garlic clove, finely chopped

– 6 eggs

– 6 tablespoons ricotta

– 4 tablespoons grated Parmesan

– Slices of bread (e.g., sourdough)

– 3 tablespoons fresh basil or oregano leaves, chopped, plus extra for garnish

**INSTRUCTIONS**

  1. Prepare the barbecue for direct cooking over medium heat (180°C to 230°C).
  2. In a Large Q ware pan, combine 4 tablespoons of olive oil and the chopped garlic. Coat the cherry tomatoes with olive oil, salt, and pepper.
  3. Once the barbecue is preheated, add the frying pan and cherry tomatoes, cooking over direct medium heat for 5 minutes or until the garlic turns golden. Add the tin of crushed tomatoes, flip the cherry tomatoes, and continue cooking for an additional 5 minutes.
  4. Transfer the cherry tomatoes to the frying pan (remove any stalks if necessary), stir, and cook for an additional 15 to 20 minutes, stirring as needed, until the sauce has reduced.
  5. Season the sauce with salt and pepper, add the fresh basil or oregano leaves, and stir. Dollop the ricotta onto the sauce. Create 6 divots in the sauce with a spoon and crack an egg into each divot. Sprinkle grated Parmesan over the top.
  6. Close the barbecue lid and cook for an additional 10 minutes, or until the eggs are slightly underdone to your liking. Meanwhile, toast the bread and brush it with olive oil. Clean the cooking grill with a wire brush and grill the bread over direct medium heat for approximately 1 to 2 minutes on each side.
  7. Remove the frying pan from the barbecue and let it sit for a couple of minutes (the eggs will continue to cook). Garnish with fresh basil or oregano and serve with crusty bread.
