INGREDIENTS
Serves 4:
4 Rings of fresh pineapple,
cored, each about 1.5 cm
thick
Coconut sugar
Caramel Sauce
4 Scoops vanilla ice cream
Toasted coconut flakes
Chopped macadamia nuts
INSTRUCTIONS
1. Preheat BBQ on high for 10 minutes with the lid closed.
2. Evenly cover both sides of the pineapple rings with
coconut sugar and let sit for a few minutes.
3. Brush your cooking grills clean with a wire brush then
reduce heat to medium and place the pineapple rings
directly onto the cooking grills and shut the lid. Grill for
around 3-4 minutes per side. Remove from BBQ & plate up.
4. Serve each pineapple ring still warm with a scoop of ice
cream a nice drizzle of caramel sauce & top with the
toasted coconut flakes & macadamia nuts.
