Lachie Strachan’s Grilled Watermelon with Honey Yoghurt
Grilled watermelon? Yes, you heard right! This recipe is such a fun twist on a summertime favourite fruit.
The flavour it takes on from the grill and smoke along with zesty lime & sea salt makes for a perfect
summertime snack at your next BBQ gathering. My only request is that you definitely cut the watermelon
into batons and not wedges as it makes all the difference especially when eating and dipping into the
dipping sauce.
INGREDIENTS
Serves 6:
1 Small watermelon
2 Tbsp olive oil
Zest of x1 lime
Juice of ½ a lime
Sea salt
Fresh mint chopped for garnish
Dipping Sauce:
½ Cup Greek yoghurt
1 Tbsp honey
INSTRUCTIONS
1. Preheat your BBQ grill on medium-high heat for 10 minutes with the lid closed.
2. Cut the watermelon into batons about 2cm thick and place them onto a chopping board. Combine the lime zest into a
bowl with the olive oil then baste on all sides of the batons. Place the watermelon batons directly onto the cooking grill
and cook for 2 minutes per side with the lid closed (just on the x2 sides)
3. Remove the batons from the cooking grill & sprinkle the sea salt evenly over each baton & squeeze the fresh lime juice
over them whilst they are still warm & finally garnish with the fresh mint.
4. Combine the yoghurt & honey and use the rind end of the watermelon to use as a handle to dip into the dipping sauce.
